BBQ Lamb Ribs
Lamb ribs are a real treat and can handle big bold flavours. This super-easy marinade combines Coca Cola, Tequila and our Harissa Ketchup for a mouth-watering sharing dish that everyone will be fighting over!
2kg lamb ribs
330ml (1 can) of Coca Cola (full sugar)
150ml Harissa Ketchup
4 tbsp soy sauce
4 tbsp soft brown sugar
5 garlic cloves (crushed)
2 bay leaves
2 sprigs of rosemary
2 tsp cayenne pepper
1 tsp freshly ground pepper
For the marinade...
Simply mix all of the ingredients together and submerge the lamb ribs completely. Cover and leave in the fridge overnight.
Pre-heat the oven to 170 C. Transfer lamb ribs into a roasting tray and pour over some of the marinade. Cover with foil and cook in the oven for 50 mins.
Remove ribs from the roasting tray and place on a medium/ hot BBQ. Cook and turn until nicely coloured.
Once cooked, scatter onto a strong serving dish and dig in! Perfect as a sharing starter with some mixed pickles.
